Rhubarb Gin 'N' Mousse Recipe

What to do with your rhubarb? Drink it! Let us introduce you to a refreshing new idea: rhubarb gin 'n' mousse.

First, you need to make your own rhubarb simple syrup. Here's how to do it:

Ingredients :

- 3 cups of fresh rhubarb from the garden, cut into 1 cm pieces (choose the reddest stems to give a nice pink color to your syrup and avoid the leaves, as they are toxic)

- 2 cups of filtered water

- 4 large fresh mint leaves

- Sugar (the quantity according to the recipe below)

Instructions :

1. In a saucepan, combine the water and rhubarb, then simmer for 25 minutes. Turn off the heat and add the mint leaves. Leave to infuse for 5 minutes.

2. Squeeze and strain the mixture to remove any rhubarb pieces, then transfer it to a smaller container.

3. Add the same amount of sugar as the resulting liquid (a simple syrup is normally 50-50 water and sugar). Heat over medium heat, stirring until the sugar has dissolved.

4. Let the syrup cool.

Now you are ready to prepare the rhubarb cocktail:

Ingredients :

- 2 ounces of Quebec gin. We used Nomades, Lime and Cucumber gin.

- 1 ounce of fresh squeezed lemon juice

- 1 ounce of rhubarb simple syrup

- 1 egg white

- Mint leaves for decoration

- Ice cubes

Instructions :

1. In a shaker, combine the gin, lemon juice and rhubarb simple syrup. Shake without the ice cubes (dry shake).

2. Add the ice cubes and shake again vigorously.

3. Pour the preparation through a strainer into a glass with ice cubes.

4. Decorate with mint leaves on top.

5. Enjoy!
