H3 RESTAURANT - Montréal

Downtown Montreal doesn't look like it used to in terms of restaurants. The tidal wave of neighborhood restaurant openings over the past ten years has completely altered the atmosphere, in our opinion. The pandemic has certainly contributed to this change too. The great classics of the 90s have almost all disappeared, leaving only a few prestigious names such as Bouillon Bilk, Européa and Toqué, but compared to the offerings of the last century, that's pretty meagre. Fortunately, Old Montreal has bounced back.

The idea of a hotel restaurant isn't necessarily what you think of when you think of haute gastronomy today. Yet that's precisely what the H3 restaurant, located in the Humaniti hotel, offers. Under the direction of chef Jean-Sébastien Giguère, H3 offers local cuisine of the highest calibre. Nestled on the hotel's second floor, the restaurant offers a breathtaking view of Place Jean-Paul Riopelle. The modern decor is warm and comfortable, and the atmosphere lively, if a little noisy. We were able to hear each other easily, but sometimes had trouble grasping the descriptions of the dishes. However, the service was impeccable. Smiles, courtesy, politeness and the pace of service were simply perfect.

As usual, we opted for the tasting menu. H3 offers two versions: a five-course menu at $75 and a seven-course menu at $90. Three choices of wine pairings are offered at different prices, which is an excellent idea. We opted for the least expensive option, the Découverte formula at $50.

The cuisine is precise and delicious, with particular attention paid to presentation. Among the seven dishes offered for tasting, we were blown away by the grilled Savoy cabbage with herb coulis, the corzettis with homemade sausage, kalette and Louis d'or, and the moose paupiette with wild boar bacon and brioche sauce. In fact, the whole meal was delicious, but these three dishes mentioned above were simply perfect. If we had to find a fault with the meal, it would perhaps be the dessert, the floating island, which was nevertheless presented to us as a favorite. Perhaps a little bland compared to the rest of the meal.

A superb address, we'll definitely be going back and it's certainly an addition to your list of restaurants for business meetings or other occasions.
